1. Gelatin and strawberry cake

Strawberry gelatin cake

Ingredients

  • 1 liter of water
  • Fresh mint
  • 3/4 cup of icing sugar (30 g)
  • 1 sachet of strawberry gelatin (25 g)
  • 2 cups of mascarpone cheese (500 g)
  • 1 + 1/2 whipping cream (300 g)
  • 1o g of orange zest (10 g)
  • 1 package of orange cookies (200 g)
  • 2 sachets of hydrated natural gelatin (14 g)
  • 2 cups halved strawberries (250g)
  • 3/4 cup melted butter (125 g)

Preparation

  • To prepare the base, place the orange cookies in a blender to obtain a powder.
  • Mix the orange cookie powder with the melted butter.
  • Place this preparation in a removable mold and press until a compact dough is obtained.
  • To prepare the cake, in a bowl, beat the mascarpone with the sugar.
  • Add the cream and continue to whisk until you get a homogeneous mixture.
  • Add the orange zest and gelatin. Keep stirring.
  • Pour this mixture on the base of cookies and put everything in the refrigerator for thirty minutes.
  • Dissolve the gelatin in hot water and let cool to room temperature.
  • Pour it over the cake, add the strawberries and put everything in the fridge.

2. Red wine and fruit gelatin

Ingredients

  • 3 cups (720 g) fruit syrup
  • 3 cups of red wine (720 ml)
  • 1 can of pineapple  (800 g)
  • 2 sachets of grape jelly (14 g)
  • 2 cups of hot water (400 ml)
  • 1 can of peaches (800 g)
  • 1 jar of pitted prunes (300 g)

Preparation

  • Dissolve the gelatin in the water.
  • Cut the fruit into small pieces, except the prunes.
  • Heat the red wine with the prunes to soften them.
  • Combine the syrup, prunes and red wine.
  • Combine all the ingredients in a bowl, then add the gelatin, the mixture you just made, and the fruit.
  • Pour this mixture into molds and put everything in the refrigerator so that they solidify.

3. Milk and fruit gelatin

Ingredients

  • 2 gelatin sachets (14 g)
  • 500 ml of water
  • 2 cups of milk (500 ml)
  • 1/2 cup of sugar (200 g)
  • 1/4 cup of water (125 ml)
  • 1 can of fruit cocktail (250 g)
  • 1/4 cup of water (60 g)

Preparation

  • Heat the fruit with the two cups of water and the sugar in a small saucepan over low heat. Turn off the heat as soon as the mixture begins to boil.
  • Pour a sachet of gelatin in 1/4 cup of water and add this mixture to the saucepan.
  • Pour everything into a gelatin mold and refrigerate.
  • Heat the milk with the sugar in a saucepan to dissolve the sugar.
  • Dissolve the other sachet in water and add this mixture to the mixture prepared just before.
  • Mix everything well and let cool to room temperature.
  • Once the gelatin has hardened with the fruit, pour the milk and grenadine mixture over the gelatin and refrigerate until it hardens.
  • Remove the preparation from the mold and serve.

4. Two-color mango gelatin

Mango gelatin

Ingredients for the water-based preparation

  • 1/2 cup of orange juice (120 ml)
  • 2 cups of mango (400 ml)
  • 1 cup of mango syrup (200 ml)
  • 2 sachets of hydrated gelatin (7 g each)

Ingredients for the milk-based preparation

  • 1 cup of cream cheese (125 g)
  • 1 cup of plain yogurt (125 g)
  • 2 sachets of hydrated gelatin (14 g)
  • 1 cup of evaporated milk (125 g)
  • 1 cup of condensed milk (125 g)
  • 200 g mango, diced

Preparation

  • Mix the ingredients of each preparation until you obtain a homogeneous mixture.
  • Pour each mixture into a mold and wait until they solidify. 
  • Remove it from the mold and decorate with mango cubes and, if desired, with mint leaves.
